Keto elephant ears will be in my kitchen when there county fair is here. Elephant ears are a big temptation for me when we are at the carnival. But not this year! I’m making my favorites ahead of time but a ketogenic version, so I won’t be tempted to cheat on my low carb diet. The dough for the elephant ears is made from FatHead Dough or Keto Dough. These warm fluffy ears are fried in avocado oil and dipped in a cinnamon and Swerve mixture at the end. Elephant Ears make a delicious keto dessert. They make a great on the go keto snack too since they are so easy to prepare.

KETO ELEPHANT EAR FATHEAD DOUGH RECIPE
10 oz mozzarella cheese
5 oz almond flour
1 teaspoon baking powder
Combine almond flour and baking powder in a small bowl.
Melt mozzarella cheese in the microwave at 60 second intervals until melted.
Add the egg to the cheese and beat with an electric mixture. Slowly add almond flour mixture and beat until combined.
Knead the rest out by hand on a lightly almond floured surface until all ingredients are combined and the dough looks like, well, dough.
